Goat Cheese and Peach Pork Chops

Balsamic bone-in pork chops with peaches and goat cheese

  • skillet


  • 2 tbsp extra virgin olive oil
  • 3-4 pork chops (medium thickness, I use bone in)
  • fresh ground black pepper (to season)
  • salt (to season)
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • balsamic glaze (optional, to drizzle)
  • 1/2 tbsp thyme
  • 1/4 cup goat cheese crumbles
  • 1 peach (washed, remove pits and wedged)
  • fresh basil for garnish


  • Use a large cast iron skillet, add olive oil on medium heat
  • While olive oil heats, mix together balsamic vinegar, honey, thyme in medium bowl. Add peaches and toss in balsamic/honey mixture.
  • Season pork chops with salt and pepper and add to hot oil in skillet. Sear on both sides for 5 minutes on each side. Remove from skillet and set aside on clean plate while the peaches cook!
  • Add balsamic/honey mixture to hot pan and cook for about 10 minutes until peaches are soft and the mixture becomes a decadent sauce
  • Add pork chops back to the skillet and cover them with the peaches and sauce. Add goat cheese crumbles to the top. Broil on high in the oven for about 5 minutes until the goat cheese is melted (this is why you need an oven-safe skillet like a cast iron!)
    Drizzle with balsamic glaze if you'd like and serve!
    We served it with homemade mashed potatoes and fresh green beans. So yummy. I also used the extra peaches to make bellinis!
